Winter Harvest Roast Vege Medley
Nothing beats a comforting winter feast, and it’s even more satisfying when it features a vibrant assortment of beautiful vegetables, freshly harvested straight from your own garden. There's something incredibly satisfying about cooking up a hearty winter meal with ingredients that you nurtured and watched grow. So, embrace the cold winter nights and whip yourself up a beautiful healthy homegrown feast.
Ingredients:
Mixture of Vegetables, Chopped (Vegetables such as: Potatoes, Carrots, Kumara, Pumpkin, Yams, Onions)
Garlic Bulbs
Chopped fresh herbs eg thyme, oregano, sage, finely chopped rosemary
Drizzle of Olive Oil
1 Tbsp Honey
Sea Salt Flakes
Freshly Ground Black Pepper
Method:
1. Place chopped vegetables in a large roasting dish. Add garlic and herbs, drizzle all over with olive oil and honey and toss together well.
2. Season liberally with sea salt flakes and freshly ground black pepper and roast in a 200C oven until all the vegetables are tender.
Remove from oven and serve.
Serving ideas:
Serve with Fresh herbs, Crumbled Feta and Balsamic Drizzled on top
Toss through pasta such as orzo or penne with a lovely pesto sauce
If there are any leftovers, combine with egg for a frittata or quiche
